Harvested at just the right moment to obtain the right amount of acidity without the potential alcohol being too high. The grapes are hand-harvested in small boxes containing up to 5kg to prevent damage to the fruit prior to pressing and to preserve the natural freshness of grapes grown at this altitude.
Ripening
The second fermentation takes place slowly in bottle at a constant temperature of 13-14°C with light and humidity also controlled in the rigorous manner we reserve for our Traditional Method Cuvage. After a maturation of 24 months on its lees Cuvage Rosé is ready to be enjoyed.
Tasting notes
Pale salmon pink in colour with a fine, very persistent mousse. On the nose there are delicate notes of rose petal and nutmeg, very elegant on the palate with a lovely, balanced finish.
Food pairings
An ideal aperitif or a perfect match for white meat or fish dishes.. Serve at 4-6°C.
