The second fermentation takes place in the bottle over 60 days at a constant temperature of 13-14°C with light and humidity also controlled in the rigorous manner we reserve for our Traditional Method Cuvage Blanc de Blancs. The wine is matured on its lees for a minimum of 24 months until Cuvage Blanc de Blancs is ready to be enjoyed.
Di colore giallo paglierino tenue, ha un perlage fine e una delicatissima spuma che abbraccia armoniosamente il bicchiere. Al naso rivela delicati sentori di crosta di pane, frutta secca tostata. Al palato presenta grande struttura e morbidezza, con un finale persistente ed equilibrato.
Medium-aged cheeses, Raschera DOP, salami, soups made with vegetables and legumes. Serve at 4-6°C
