Monferrato. The grapes are harvested by hand at the perfect level of ripeness to express the desired elegance and finess and to create the perfect balance on the palate.
The second fermentation takes place in the bottle over 60 days at a constant temperature of 13-14°C with light and humidity also controlled in the rigorous manner we reserve for our Traditional Method Cuvage Blanc de Blancs. The wine is matured on its lees for a minimum of 24 months until Cuvage Blanc de Blancs is ready to be enjoyed.
Pale yellow straw in colour with a very fine and persistent mousse. On the nose there are delicate hints of crusty bread, white spice and yellow fruit combine on the palate to produce an elegant and balanced finish.
Medium-aged cheeses, Raschera DOP, salami, soups made with vegetables and legumes. Serve at 4-6°C.
