The winemaking process begins with the gentle pressing of whole bunches, allowing the different juice fractions to be separated. After cold static settling, fermentation takes place at temperatures of around 15°C. The Cuvée then matures on its fine lees in stainless steel for seven months, without undergoing malolactic fermentation, resulting in a complex and well-structured base wine ready for secondary fermentation in the bottle. Tirage is typically carried out in April, allowing secondary fermentation to begin under naturally favourable temperatures. The wine is aged on the lees for a minimum of 36 months before disgorgement à la glace. A further bottle ageing of at least six months is recommended to fully appreciate its finest expression.
